Olives black Amfissis that are picked with care from mid-November until the beginning of Spring, when they have taken on their black color on the tree. They are preserved in the traditional way in salt water (brine) for a few weeks and then they are pickled and preserved in oil. Their special taste is slightly salty and mildly spicy.
