Kalamon olives with homogeneous but varying chocolate to dark brown or violet color and characteristic pointed shape. They are firm and crunchy, with a subtle fruity flavor that is also salty, slightly bitter and vinegary. They are preserved in the traditional way in salt water (brine) for a few weeks and then they are pickled and preserved in oil.
