Lazy Hilopitaki

Χυλοπιτάκι τεμπέλικο

Recipe : Lazy Hilopitaki

Degree of difficulty : Low  

Cooking time : 20 min  

Materials :  

400 gr. Famelima Hilopitaki

4 glasses of tomato juice  

2 grated onions  

1.5 cups of Famelima extra virgin olive oil  

2 teaspoons of grated oregano  

20 pitted Famelima olives  

200 gr. slice  

Salt  

Pepper  

Cooking process :  

Sauté the olive oil and grated onion gently in a saucepan and then add the Hilopitaki, oregano, Kalamon olives and 2 glasses of tomato juice, stirring constantly, adding a little salt and plenty of pepper. Stir constantly and when the Hilopitaki have absorbed most of the juice, turn off the heat, cover and let all the liquid absorb.  

Serving :  

Add melted feta to the pot, mix and immediately serve the warm Hilopitaki on a plate.
